Chicken Fry

Chicken Fry

This is a Chicken fry without tomatoes where the simple spices and freshly ground pepper adds the depth to the dish. Coriander leaves are cooked along with chicken instead of garnish and roasted curry leaves added as a garnish lends the Chicken fry a flavorful tasty side dish. A refreshing hint of lime peps up the dish.

Capsicum Egg Fry

Capsicum Egg Fry is a simple stir fry. Capsicums are easy to cook as it does not require much time. The delicate taste and pleasant flavour of capsicums when paired with eggs makes a delicious stir fry. Tomatoes are added as it coats the spices well giving it a tangy taste to the stir fry. The ginger garlic in the fry gives a great flavour and makes it rich. Coriander adds the colour for this wonderful stir fry.

kodi Kura - a simple Chicken Curry




Kodi Kura aka Chicken Curry is a rich, creamy curry with coconut milk as the base. This chicken curry gets its spicy taste from the wonderfully balanced combination of the ginger, garlic and green chilies. Chicken cooked in the coconut milk yields a refreshingly different taste. Here, in the curry, the cloves and cinnamon is added whole giving a mild flavor to the curry. The blended coriander leaves gives it a herb flavor along with all the spices giving the Chicken curry a whole new thick soupy taste.

Hitikida Avarekaalu Saaru is a daily fair almost, during the Beans season in Karnataka, which is a real treat for Kannadigas. Literally a fair is also conducted in Bangalore, India, to mark the first harvest of this Beans, where people do take part in buying this beans in large quantities. A variety of recipes are dished out using the Hyacinth/Avarekaalu Beans. The curry is brought out at its best with minimal ingredients, so that the aroma of the beans is highlighted. Here, the garlic, ginger, onions, tomatoes and coconut makes the creamy and spicy. If want to make it with extra zing, can also add Mutton Kheema in the curry, which takes the curry to another new level for non-veg lovers.

Mutton Chaaps

Mutton Chaaps is a dish cooked with the bones that adds flavor and the moistness of the meat. Mutton Chaaps is something different to the way the meat is chopped. A meat chop is a cut of meat cut perpendicularly to the spine, and usually containing a rib and served as an individual portion. The most common kinds of meat chops are lamb or goat however other kinds of meat also been chopped the similar way. The rib chops are narrower, fattier and tastier as they are sometimes beaten with the side of a cleaver or with a meat mallet to make them thinner and tenderer. The generous pile of meat rests atop a mound of steamed white rice or arranged onto a place and is ringed by garnishes of onion rings makes a excellent and sumptuous meal.

Any dish prepared with Egg is always delicious so is the Egg Biryani, which is a hearty flavorful comfort food. It also elevates everyday favorites and gives a new spin with full of substantial flavors. 

Simple Mutton Biryani






Simple Mutton Biryani is an aromatic one-pot curry with mild flavour. The dish is an easy to make with fresh ingredients for a comforting day and a great treat to the family. Here in mutton Biryani, in addition to the choice of herbs and seasoning, the timing of when the flavours are added will affect the dish. Here ghee/clarified butter condiments the dish. To compliment the Mutton Biryani serve with Salads, Mutton Curry, boiled egg, Egg curry or even Brinjal curry (Gutti Vankaaya Kura)

Mutton Gravy

Mutton Gravy is cooked with a lot of spices to give a soupy gravy. Here all the spices are fried separately and blended into a paste, and then added to mutton to form a rich and spicy gravy. The texture of the Mutton Gravy is got by adding coriander leaves and blended along with the spicy paste, which gives a nutty flavour and a thickening effect to the gravy. The gravy makes a good combination for most of the breads and rice.

Pepper Chicken Dry is a Spicy dish, which is simple and quick, and definitely a treat to your taste bud. Here the chicken is cooked with pepper and other spices. Cauliflower Egg Burji is a vegetable combined with egg yolk for the added taste. This vegetable goes well with all forms of bread. It makes a filling in sandwiches too. For kids, this vegetable filled in sandwiches along with cheeze and grilled  is the best food. In my kitchen, I use this filling for my fried and baked pastries (samosas) too.

Egg Curry is something very common recipe made in all our kitchens. This recipe can be enjoyed with all sorts of breads, rice, steamed foods, as well as pancakes. There are a lot of ways and styles in making this curry with addition and deletion of ingredients, and also ways of cooking methods too like adding boiled eggs in the gravy, boiled and cut into different shapes to blend in the curry, as well as just drop in the egg white and yolk in the curry. Whichever style it is followed, it gives a good taste depending upon the gravy ingredients.

Mutton Biryani

Biryani was invented in the kitchen of Mughal Emperors. In India, Kashmir, Kolkata, Bombay, Lucknow, Hyderabad and Delhi/Agra are the main centres of Biryani cuisine. Biryani is a recipe cooked with a lot of flavours. First a curry is made and rice is cooked separately. The curry and the rice are then brought together and layered, resulting in a dish of the contrasting flavours of flavoured rice (which is cooked separate with spices) and intensely flavoured sauce and meat or vegetables. This separation is partly of necessity: the proportion of meat/vegetables to the rice is high enough to make biryani a one-dish meal, and the cooking time of each of the main ingredients is significantly different from each other.

King Fish Fry is marinated and shallow fried. As the name itself says, this variety of fish, is the King of all fishes. Since, the food here is only partly submerged in oil, it must be turned over partway, through the cooking process.


Tandoori Murgh

Tandoori Murgh is a Chicken marinated in yogurt and spices, and slow cooked in an electric oven or gas oven, or on charcoal tandoor. The heat for a tandoor was traditionally generated by a charcoal or wood-fire, burning within the tandoor itself, thus exposing the food to live-fire, radiant heat cooking, and hot-air, convection cooking, and smoking by the fat and food juices that drip on to the charcoal.

Chicken Curry is an Indian-based curry cooked with a lot of spices and flavoured coriander. This chicken curry tastes good with all kinds of bread, Indian and continental. It also tastes good with a lot of indian foods like, rice (simple and flavoured, such as ghee rice and zeera rice), dosa, idly, puttu (kerala cuisine), raagi ball (Karnataka cuisine) and semiya (Tamil Nadu cuisine).
