Muzaffar / Muzaffir is a sweet delicacy. Rice being the main ingredient, the dessert calls for a Basmati variety of rice because of its rich aroma and flavor it imparts to the dish. This saffron-infused dish is a visual treat and appealing, and lends a supreme taste with rich and sweet along with assorted nuts roasted in the clarified butter (ghee). Muzaffar is a perfect dish for any of the festive occasions be it Diwali or Ramadan.
The Muzaffar is a sweet delicacy similar to the Phirni or rice Kheer. Phirni being made with the powdered rice, Kheer is made with the whole rice. Its just one of the variety, which is very rich and savoured especially during festive occasions.
Ingredients:
1. Basmati Rice - 250 grams
2. Milk - 4 litres
3. Sugar - 500 grams
4. Mawa (Koya)/milk solids - 100 grams
5. Milkmaid - 200 grams
6. Clarified butter / ghee - 250 grams
7. Nuts - 1 cup (including Almonds, cashews and Chironji (Hindi name))
8. Green Cardamom - 5 to 6 nos.
Cooking Method:
1. Wash rice and boil it in 5 to 6 cups of water until done. In the meantime soak the almonds and cashews in warm water. Peel the skin from the almonds and slice it thin keeping it aside.
2. Add milk to the done rice and keep stirring. Stirring the rice with milk is an elaborate process as the flame should be in medium and continuous stirring is very much necessary. Add the powdered cardamom.
3. Mix saffron in water / milk and pour it over the milk-rice mixture.
4. Once the rice and milk mixture gets thick, switch off the flame. Add sugar and give it a thorough mix. Now the mixture will get watery.
5. Add Mawa / milk solids and keep the container on the low flame, and mix it thoroughly until the milk solids gets dissolved. Switch off the flame. Add milk maid giving and mix it once again.
6. In a pan, heat ghee/clarified butter, add sliced almonds and cashews, and fry till light golden color. Add Chironji too and switch off the flame until the color changes to golden.
7. Pour the fried nuts on the rice-milk mixture and the dessert is ready to serve.
