Hesarubele Payasa

Hesarubele Payasa is a traditional sweet prepared with coconut, jaggery, poppy seeds, green gram and clarified butter i. e., pure ghee. It is a sweet porridge, slightly thickened to creamy consistency. This consistency is produced using ghee roasted raw rice as a thickening agent in this sumptuous vegan dish.

Sheer Khurma - a Vermicelli Pudding

Sheer Khurma or Sheer Khorma is a vermicelli pudding prepared by Muslims on Eid ul-Fitr and Eid al-Al-Adha in India, Pakistan and Bangladesh. Sheer Khurma is similar in the lines of preparation of Vermicelli Kheer but only extra ingredient 'dates' is added here. The dates are boiled in the milk to give it an added authentic taste to the Sheer Khurma. And during the fasting days of Ramadan, Sheer Khurma with dates are prepared as dates are an excellent source of fiber, sugar, magnesium, and have carbohydrates, which will aid the body in maintaining health.

Mavina Hannu Seekarane or Rasayana - a Mango Coconut dip

Mavina Hannu Seekarane or Rasayana is a dip commonly relished by the people of coastal regions of Karnataka, i.e., Mangalore, Udupi and many other parts, which is also known as South Canara Region. Coconut being the main cultivation in these areas, the recipe calls for the Mango pulp mixed with coconut milk and flavoured with cardamom. 

A Classic Mumbai Style Vada Pav

Vada Pav is a Mumbai's favorite and authentic street food. Though a lot of variations has been brought in the preparation of this Vada Pav, still the basic one remains a hit. The taste of Vada Pav is hidden in the garlic chutney, which is got a nutty-spicy-sour taste. A fresh herb flavor is got with the addition of the Green Chutney, which is a mixture of green chilies, mint and coriander leaves to the Vada Pav.

Boodida Gummadikaya Halwa


Gummadikaya Halwa is a traditional sweet dish. Unlike Carrot / Gazar ka Halwa, this delicacy is prepared with a Ash Gourd vegetable. The vegetable is called in different names like Winter Melon, Winter Gourd or the White Gourd. Menthya Soppina Bhath is a flavorful rice of Karnataka, India.  In Karnataka, Bhath is associated to any rice dish flavored differently with different spices, herbs and vegetables. Methya Soppu is the Fenugreek leaves. The rice is prepared with the Fenugreek leaves, mint, green chilies and peas, and thus a green color is adopted with all fresh herby flavors. Though the dish Menthya Soppina Bhath is highly nutritious, it is also tasty when prepared in a manner combing herbs and spices.

Paniyaram

Paniyaram is addictive breakfast dish from Southern India. Its has got various names and cooked in wide varieties, such as - Kuzhi Paniyaram, which is prepared in both salt and sweet version and the sweet Paniyarams are cooked by adding jaggery, coconut and flavored with cardamom in Tamilnadu, India, and in Gods own country Kerala it is Unniyapam, belended with mashed bananas and grated coconut for the people with sweet-tooth. This dainty delicacy is known as Gunta Pongadaalu / Gunta Ponganalu Gunta Punugulu in Andhra Pradesh and Appe / Guliappa / Gulittu / Paddu in Karnataka, India. The spicy Paniyaram can also have sautéed onions and green chilies mixed with the batter for that extra yummy taste.

Ice Gola

The Ice Gola can be molded in any shape as desired, however these are best available in conical / cylindrical shape. This universally loved ice dessert known by variety of names, like - Hawaiians call this 'Shave Ice'/'Ice Shave'; Indians most famously call Gola or ChuskisThough lot of flavors and colors make this Golas very tempting but vital thing is to make sure that the colors are natural. I recommend, the colorful flavored sweet syrups to be made with your choice of flavors depending upon the seasonal availability, such as guava, pineapple, coconut cream, passion fruit, kiwi fruit, Blackberry, rose, mango etc. The tangy and aromatic flavors in the syrups make Ice Gola  delicious & lip-smacking in every bite. The Gola or Shaved ice is generally served in a conical paper, plastic cup or sometimes served in mugs / glasses topped-up with multiple flavors, including with milk cream called "malai Gola".

Rose Milk - as the name suggest is a mix of Milk and Rose Syrup. Rose Milk has a mild rosy-flavor that makes lovely summer-time drink. This cool-drink can have a calming effect thereby reducing stress and anxiety. For many, this flowery scent cool-drink may give nostalgic kick with that extra soothing effect; that is no where compared to the modern colas.

Sev Puri is chaat with a twist of savory snack and chutney stuffed in puffed pooris. Sev Puri Chaat is available in different versions with local touch or flavor depending upon the geographies. Even sometimes flat pooris called papdis are used to make sev Puri Chaat.

Potato Spinach Cutlet is prepared with the season's fresh spinach leaves, enriched with lentils and potatoes. These Potato Spinach Cutlets can be presented in a variety of shapes and one such shape I thought to make was heart shape, on the occasion of  this Valentine's Day. Generally these cutlets are hot favorite among family and friends especially with little ones. Kids who are too picky in eating their veggies, these rich-veggie cutlets will serve the purpose and you can also use your creative imagination to surprise your little ones by presenting them in various interesting shapes. These cutlets can also be topped with finely-chopped onions, tomatoes and clubbed with green coriander-chili chutney and tamarind chutney to get the Chaat feel.
