Dahi bhalla
Dahi Bhalla is a Chaat delicacy, found all over India in one form or another and in some regions it is also known as Dahi Vada. The plating of Dahi Bhalla varies in different parts of India. Bhalla or Vada is a fried dumpling prepared with Black gram / Urad Dal, which is soaked in water for some time and then blended into a thick smooth paste. The Bhalla is then soaked in water in-order to get tenderness and this also remove excess oil in it; then dropped it in a bowlfull of curd or yogurt. Just to give this delicacy a hint of garnishing; green chutney and tamarind chutney is poured over it, and other spices also sprinkled over for that extra yummy mouthful chaat flavor.

Dahi Bhalle

Ingredients:

1. Black gram / Urad dal - 1 cup
2. Ginger - 1 small piece
3. Green Chilly - 2 no.
4. Baking soda - 1/4 tsp.
5. Curd - 2 cups
6. Roasted cumin powder - 1 tsp.
7. Chilly powder - 1 tsp.
8. Chat Masala - 1 tsp.
9. Green Chutney - 2 tbsp.
11. Salt
12. Sugar - 1 tsp.
12. Oil for frying

Cooking Method:

1. Clean and soak the Urad dal overnight, or at least for 6 hours.

2. Once the urad is soaked for the said hours, drain the water and blend it to a smooth paste, adding ginger, salt and green chilly. While grinding, add drops of water. It should be a thick paste so that its easy to drop the batter in the hot oil.

3. Take the urad dal batter and add baking soda to it; now beat the batter until light. In a bowl take some water. Drop the batter forming round balls in the water so that its easy to get the perfect round shape and slide easily.

4. Heat oil in a pan, and fry these round shape batter. Let it cook slowly at simmer until it gets the light golden color on all sides. Repeat the same with rest of the batter and fry in the batch of 4 to 5 Vadas (according to Pan size).

5. Collect the vadas on a paper towels to get soak excess oil from Vadas and let them cool down.

6. Drop these vadas in the warm water and keep it for a while. Squeeze them gently and take in onto a plate.

7. Beat the curd along with the milk adding salt and sugar. Drop the vadas in this and refrigerate it for a while until the dumplings are soaked well.

8. When ready to serve. Take the Dahi Bhalla in a bowl, sprinkle some cumin powder.  Pour some green chutney and tamarind chutney on top of it. Sprinkle some chilly powder and chat powder and the Dahi Bhalle is ready to relish.
