Sabudana Vada (Sago Cutlets) is a very tasty snack, which can had as a main dish along with any dip of your choice or can be relished as a side dish. The Sabudana Vada's flavour is so wonderful because of the fresh peanuts used in the recipe and fried later. This gives the cutlets the crispy texture from outside and soft texture from inside. The dish is very popular in Northern part of India. This is enjoyed as a main dish during the fasting and festival days.
Ingredients:
1. Sago (Sabudana) - 1 cup (medium Size granules)
2. Groundnuts - 1/4 cup
3. Boiled potato - 1 no.
4. Cumin seeds - 1 tsp.
5. Green chillies - 2 nos.
6. Chilly powder - 1/2 tsp.
7. coriander leaves - 1/2 cup 8. Salt as per taste
9. Oil for frying
Cooking Method:
1. Clean and soak the sago granules in water overnight. The water should not be more, just till the granules immersed. If the water is more, then the granules will get sticky. The sago granules will be swelled up.
2. Powder the raw groundnuts coarsely. Chop green chillies.
3. Mix with the sago granules, the powdered groundnuts, boiled potato, green chillies, cumin seeds, black salt, coriander leaves and make the size of cutlets (just make a round lemon size and pat them).
Note: The cutlets can also be shallow fried, and this would be called Sabudana Tikki.
