French Beans Stir Fry is a nutrient-packed side dish. Here the vegetable is paired along with lentils and spices, and adds both flavour and colour. The dish requires very less oil just to fry the spices, and other main ingredients are boiled separately. A comfortable dish, which goes well with rice and bread, and makes an excellent balanced diet.
The dish is very handy when u run with very less beans in your vegetable basket and u will have to cook a meal. Here by adding lentils to the dish the quantity and taste multiplies and your meal is ready. Isn't it a great idea!.......:)
Ingredients:
1. French beans - 1 cup (cleaned and chopped into fine pieces)
2. Split red gram - 2 to 3 tbsp.
3. Onion - 1 no.
4. Green Chilies - 2 no.
5. mustard seeds - 1 tsp.
6. Bengal Gram/channa dal - 1/2 tsp.
7. Split black gram/urad dal - 1/2 tsp.
8. Turmeric powder - a pinch
9. Chilly powder - 1/4 tsp.
10. Coriander powder - 1/4 tsp.
11. Curry leaves - 4 to 5 leaves
12. Grated coconut - 1 tbsp. (optional)
13. Oil - 1 tsp.
14. Salt to taste
Cooking Method:
1. Boil the french beans and split red gram separately in water adding salt. If there is water after its boiled, strain both of them separately and the water can be used for soup. Since the dish is dry both the french beans and lentils should be dry after its boiled.
2. In the meanwhile slice the onions finely and split the green chilies, and keep them aside.
3. Heat oil in a pan and add mustard seeds. Once this splutters, add split black gram and bengal gram. Once both the lentils gets light brown, add chilies followed by onions. Add little salt only for onions. Fry this for 2 mins on medium flame.
4. Then add boiled beans and lentils to it, and give it a thorough stir. After stirring add grated coconut and again stir it and switch off the flame. Once coconut is added do not keep it on flame for more time otherwise coconut will change its colour and does not give a good texture.
5. Serve the French Beans Stir Fry with Rice and bread of your choice and enjoy the meal.
Note:
1. While preparing Sambar or Dal Rasam, you can take out little lentil (split red gram) once its boiled and can be used here for stir fry. The dish can be made easier this way as beans boiling alone does not require much time.
2. Coconut in the dish gives a very good taste but truly optional.
3. Kindly split the green chilies otherwise since both chilies and beans are similar in colour. Anyways the beans are chopped finely.
