Eggless Orange Muffins is a purely a orange flavoured vegan dessert with a hint of curd in it. The flour reacts to the citrus along with other ingredients and the muffins becomes so light and fluffy though eggs are not added to it. Those who are allergic to eggs, for them these muffins are a treat. Just indulge in these muffins and have a great time....:).


Here in the recipe, I have used orange juice to provide moisture and help bind the ingredients together. The salt enhances flavour to the muffins and sugar provides sweetness. The vegetable oil used here helps keep the cake moist.

Ingredients:

1. Self Raising Flour - 1 cup
2. Sugar - 3 tbsp.
3. Honey - 1 tsp.
4. Orange juice - 1/2 cup
5. Yogurt - 1 tbsp.
5. Salt - a pinch
6. Oil - 3 tbsp.

Cooking Method:

1. Preheat the oven at 180 degree C for 10 minutes.

2. Grease your muffin tray or moulds and keep them aside.

3. Combine flour, sugar, honey, salt, yogurt and sugar, and mix well.

4. Add Orange juice and oil in another bowl and mix this too.

5. Combine dry ingredients to wet ingredients and fold it into a batter. 

6. Do not over mix the batter. Once done, pour the batter in the muffin molds and bake it for 15 to 20 minutes at 180 degree C.

7. Once baked take out from the oven and chill the muffins on a cooling rack for 10 minutes.

8. Muffins are ready to be served.
