Masala Puri Chaat |
Masala Puri Chaat is the Bangalore's most sought-after Chaat. The most elaborate process in this recipe is making of peas-masala; which is the base of Masala Puri chaat that delegates the authentic taste in it. Peas-Masala is a spicy and tangy gravy, which is enabled by blending-in green chilies and dry mango powder or Aamchur. Masala Puri is served with raw chopped onions and tomatoes on top of it, which gives this chaat dish a wholesome texture and taste. It is perceived that most Bangaloreans would preferably order Masala Puri Chaat first and then proceed with others chaats; when visiting to any chaat corner.
However, even most chefs resort to flat or crushed Puris to make Masala Puri. These flat or crushed Puris are a by-product when making Puffed Puris. So why wait now; go-ahead and give surprise to your loved-ones by making this mouth-watering Masala Puri Chaat.
Ingredients for Peas Masala:
1. Dried peas - 1 cup
2. Onions - 1 no.
3. Tomatoes - 2 no.
4. Potatoes - 2 no. small
5. Ginger - a small piece
6. Skin out Garlic - 2 tbsp.
7. Green Chillies - 3 no.
8. Coriander leaves - handful
9. Garam Masala - 1/2 tsp.
10. Chilly powder - 1/2 tsp.
11. Pepper powder - 1 tsp.
12. Dry Mango / Aamchur powder - 2 tsp.
13. Coriander powder - 2 tsp.
14. Turmeric - 1/2 tsp.
15. Oil - 2 tbsp.
16. Salt to taste
Cooking Method:
1. Soak the dried peas in water for 6 to 7 hours. Pressure cook the peas until tender with 4 cups of water. Also pressure cook the potatoes separately.
2. In the meanwhile, when the peas are getting cooked, work on blending the paste of onions, tomatoes, ginger, garlic, coriander leaves and green chilies.
3. Heat oil in a pan adding the blended paste and cook the same on medium flame until the oil leaves the sides. Now mash the boiled potatoes and give it a through stir adding salt.
4. Now add all the dry spice powders like chilly powder, coriander powder, pepper powder, amchur (Dry Mango) powder and turmeric; except Garam Masala.
5. Add the boiled peas and cook until a gravy texture is formed, add more water if required, as the gravy should result medium thick.

For Assembling the Masala Puri Chaat:
1. Small Puris - 3 to 4 no.
2. Peas Masala - 3 tbsp.
3. Chopped onions - 2 tbsp.
4. Chopped Tomatoes - 2 tbsp.
5. Coriander leaves chopped finely - few
6. Spicy savory called Sev - few
7. Chilly powder - 1/4 tsp.
8. Chat Masala - 1/4 tsp.
9. Cumin / jeera powder - 1/4 tsp.
Method: Crush the Puris onto a plate and pour the warm peas masala over it. Top them with chopped onions and tomatoes, and coriander leaves. Sprinkle some sev over it for the crisp and texture. Finally sprinkle chilly powder, chat masala and cumin powder and this is it... Now enjoy the homemade Bangalore's favorite Masal - Puri with family & friends.
