Grated Corn Chaat


Bhutte Ka Kees is a Chaat recipe synonymous to the Indore city, which is the commercial capital of the state of Madhya Pradesh. Bhutte Ka Kees is a season dish prepared when fresh corn is available. 'Butte' means corn and Kees refers to the grated part. Authentically this corn kennels from the cob are grated and then proceeded with the recipe. But nowadays the corn in frozen way is available all through the year at all places. In this case, the corn kernels can be blended coarsely and then considered in the recipe. These grated corn is tempered with mustard seeds and spiced with green chilies. To retain the moisture in the corn after tempering, chopped onions are used here though this also adds taste to the whole dish. Grated coconut is garnished in Bhutte Ka Kees, which adds mildly sweet taste with the herby flavor of chopped coriander leaves topped over the nutritional corn dish.

Presenting here's the recipe for famous Chaat of Indore, Bhutte Ka Kees.

Ingredients:

1. Corn Cobs - 2 no.
2. Green Chilies - 4 no.
3. Onions - 1 no.
4. Mustard seeds - 1 tsp.
5. Grated Coconut - 2 tbsp.
6. Coriander leaves - handful
7. Oil - 1 tbsp.
8. Salt to taste

Tempering the grated corn for corn chaat
Cooking Method:

1. Grate the corn kernels from the cob and keep aside. Chop the green chilies and onions too and keep aside.

2. Heat oil in a pan, add mustard seeds. Once you hear the spluttering sound, add green chilies followed by chopped onions and let it remain for 3 to 4 minutes. Now add the grated corn to it adding salt.

3. Cook this on low flame until all the moisture is absorbed.

4. Garnish Bhutte Ka Kees with chopped fresh coriander leaves and grated coconut. Serve warm and relish this healthy dish with the name of Chaat.
