Marinated Pan-Fried Brinjal/Aubergine

















Marinated Pan-Fried Brinjal/Aubergine is a interesting appetizer or a starter dish. It provides a different taste with a mix of variety of flours, when marinated with different spices, which makes it a delicious and an interesting palate. For a non vegetarian, this would be a alternative to any dish where the fish is fried and for vegetarians, this is not less than any treat. 

Ingredients:

1. Aubergine/brinjal - 1 round brinjal of medium size
2. Gram flour - 1/2 tsp.
3. Maida - 1/4 tsp.
4. Cornflour - 1/2 tsp. (alternatively can also use rice flour)
5. Ginger garlic paste - 1/2 tsp.
6. Turmeric - a pinch
7. Chilly powder - 3/4 tsp.
8. Coriander powder - 1/2 tsp.
9. Garam masala - 1/2 tsp.
10. Pepper powder - 1/4 tsp.
11. Thick tamarind pulp- 1/2 tsp (alternatively can also use lemon juice extract)
12. Salt to taste
13. Oil

Cooking Method:

1. Dry roast the gram flour until the raw smell disappears and it turns slightly brown. Let the flame be really very low otherwise the gram flour will change the color without getting roasted well.

2. Mix the roasted gram flour with 1 tbsp of oil and add all the other ingredients to this and mix well.

3. Now cut the brinjals to round shapes keeping it slightly thick. Marinate the brinjal pieces with the above mixed spices and allow it to rest for atleast 3 to 4 hours. You can also pop them in the refrigerator too.

4. Once the brinjals gets marinated well, shallow fry them with little oil using a flat pan again at low flame.

5. Serve them as a appetizer with salad or can be served as a side dish to the main dish too.

Note:

1. Amchur powder can be added to the dish alternatively for marinating other than lemon juice/tamarind pulp extract.
