Potato Peas Stir Fry is a most common method of cooking potatoes in most of the northern Indian cuisine. Here the peas are so tender and gets cooked quickly. Here I have paired the peas with all-time favorite vegetable potato and made a stir-fry and the result is always delicious. Here the potatoes can be cooked at your own convenience. You can make it crunchy or soft tender.


This stir fry is so easy that if nothing I could think or no stock of vegetables in the fridge, this is the one, which comes to the rescue as always i would have stocked potatoes and frozen peas. This is the stir fry I use most of the times for the lunch box accompanying parathas or chapathis. This is again a one pan dish, just chop and add it to the pan makes such lovely delicious stir fry.

Ingredients:

1. Potatoes - 2 to 3 no.
2. Peas - 1 cup (fresh or frozen)
3. Onions - 1 no.
4. Tomato - 1 no.
5. Cumin seeds - 1 tsp.
6. Chilly powder - 1 tbsp.
7. Coriander Powder - 1 tsp.
8. Garam Masala - 1/2 tsp.
9. Turmeric - 1/4th tsp.
10. Coriander leaves - handful
11. Salt to taste
12. Oil - 2 tbsp.

Cooking Method:

1. Chop potatoes into small cubes. Chop onions and tomatoes too finely.

2. Heat up oil in a pan and add cumin seeds. Then add onions. Let it fry well until it changes its colour to light.

3. Now add chopped potatoes and give a stir and close the pan with a lid. Let the flame be low. Occasionally stir it so that it doesn't get burnt. 

3. Once the potatoes are half cooked, add peas and salt and give it a thorough stir. Close the lid. (Once you add salt it will just cook in low flame and does not get burnt).

5. Once the vegetables gets little tender, add turmeric, chilly powder, garam masala, coriander powder and mix well. After mixing it well add tomatoes and keep the lid covered and switch off the flame.

6. The Potato Peas Stir Fry is ready to relish with coriander leaves garnished beautifully and can be served as a side dish, or with any kind of breads like roti, paratha, poori etc.


Note:

1. Alternative to garam masala is just powder the cinnamon and cloves and add to the stir fry.
2. Can include garlic and ginger too in this stir fry.
3. Can omit onions if not interested. The stir fry still tastes so good.
