Instant Tomato Rice

Instant Tomato Rice is a tomato flavoured rice that can be made with left over rice too. It can be made with minimal ingredients, adding flavour and taste to the steamed rice. This recipe goes well for lunch boxes as its prepared in minutes. Here the recipe is best suited for kids too as its less spicy,  and for taste split chillies are added, which can be taken out/omitted, while giving it to kids. And also for the texture, very little colour of turmeric is added as it makes visually appealing for kids.

There are lot of variations in cooking the tomato rice. I have already blogged Tomato Rice with more ingredients and also, which involved time in cooking the rice along with the spices. Though the Tomato Rice differs in method of cooking with the Instant Tomato Rice, both have their unique taste, which satisfies everyone's palate. 

Ingredients:

1. Cooked Rice - 1 cup
2. Onion - 1 no.
3. Tomato - 2 no.
4. Green Chillies - 2 to 3 no.
5. Mustard seeds - 1 tsp.
6. Bengal Gram/channa dal - 1 tsp.
7. Split black gram/urad dal - 1 tsp.
8. Turmeric powder - a pinch
9.  Curry leaves - 4 to 5 leaves
10. Oil - 2 tsp.
11. Salt to taste

Cooking Method:

1. Chop onions and tomatoes separately. Split the green chilies and keep aside.

2. Heat oil in a pan and add mustard seeds. Once the mustard seeds splutters, add curry leaves followed by green chilies. Then add onions and saute for 1 minute. Add tomatoes to it and allow to cook along with other spices.

3. Add turmeric powder to it and once turmeric powder incorporates in the oil add cooked rice and salt to the spices and give it a thorough stir covering the lid for 3 to 4 minutes.

4. The Instant Tomato Rice is all done so instantly and can be enjoyed with yogurt or some crispies.
