Mashed Potato

Mashed Potato is a classic simple recipe and a perfect condiment for Masala dosas, pancakes, chapatis and fried pooris. The basic and perfect spices to this mashed potato, makes an accomplished dish. This dish also goes as an accompaniment to your main dish. The Masala Potato can be a base to so many dishes, like coating this with flours and deep frying them can become your appetizer and snacks too.


Ingredients:

1. Potato- 4 to 5 medium size

2. Onions (preferably white onions) - 2 medium size
3. Tomato - 1 small size
4. Green Chilly - 4 nos.
5. Mustard seeds - 1 tsp.
6. Black gram (urad dal) - 1 tsp.
7. Bengal gram (channa dal) - 1 tsp.
8. Cashews - 3 to 4
9. Turmeric - 1/4 tsp (optional) if you don't want the colour
10. Oil - 1 tbsp.

Cooking Method:

1. Cut the potatoes into cubes and pressure cook it until tender.

2. Once done, peel the skin of the potatoes, mash it and add turmeric and salt, and 1/2 glass water. Keep it aside.

3. Chop the onions and tomatoes finely. Slit the green chillies.

4. Take the oil in the pan, add mustard seeds. Once the mustard seeds splutters, add  bengal gram, black gram and cashew nuts. Once it turns light golden brown, add green chillies, onions and tomatoes in the order, giving a gap of 2 mins. after each ingredient.

5.  Finally add the mashed potato mixture to it and blend it until the water evaporates.

6. Serve hot with dosas and pooris.

* Once the potatoes are boiled do not pour cold water to make it chill. Instead leave it for sometime in the colander and then peel the skin. 
*Choose good quality potatoes so it tastes good.
