Brinjal Rice (Brinjal Pulav)
Brinjal Rice (Brinjal Pulav) is a one pot meal with rice and brinjal combination. Having a spongy texture and a pleasantly bitter taste, the brinjal taste excellent with a blend of different spices. The dish gives a an aromatic flavour, which makes it very inviting. Brinjal Rice can be enjoyed with Yogurt mixed with raw onions (Raita). 


1. Rice - 1 cup 
2. Brinjal - 5 to 6 nos. medium size (preferably round ones as shown in the fig. right side)
3. Onions - 2 nos. 
4. Tomatoes - 2 nos.
5. Garlic - 1 nos.
6. Ginger - one and half inch size
7. Green Chillies - 5 to 6
8. Chilly powder - 1/2 tsp.
8. Mint leaves - 1 cup
9. Coriander leaves - 1 cup
10. Cloves - 3 to 4 nos.
11. Cardamom - 2 nos (optional)
12. Cinnamon - 1 small piece
13. Star anise - 2 nos.
14. Oil 3 tbsp.
15. Ghee - 1 tbsp.
16. Salt to taste

Cooking Method:

1. Clean the rice and soak it in water. Cut the brinjals length wise and keep the size medium.

2. Grind garlic, ginger, green chillies,  mint leaves and coriander leavesin the mixer into a fine paste with little water (keep aside some mint and coriander leaves for garnishing).

3. Add oil and ghee in the cooking pot. Once the oil heats up add cardamom, star anise, cinnamon, cloves and allow these flavours to get into the oil.

4. Add onions and tomato respectively, and fry them.

5. Now add the grinded masala paste to this and fry till the oil separates.

6. Add brinjal pieces and chilly powder and cook for about 5 minutes in medium flame. 

7. At this stage, add 2 cups of warm and bring it to boil. Simultaneously add salt too.

8. Now add only the rice to the boiling water in the pot. Discard the remaining water in which the rice was soaked.

9. Once rice gets cooked garnish it with the remaining mint and coriander leaves. Enjoy this tasty aromatic dish.


To make the rice more rich, cashew nuts can be added.
