Aloo Beans Subzi


Potatoes, which are called as 'Alu' or 'Aloo' is a fond vegetable among people in India, specially North India. In almost every North-Indian homes, potatoes are paired with a lot of vegetables like french beans, lady's finger, brinjal, capsicum, fenugreek leaves among few, and cooked as a side dish for main lunch or dinner. Dal-Roti being the main dish, accompanied by Papad and Pickle, Aloo Stir Fries completes the dish in every home in North India.

Here, the Aloo Beans Subzi is with no onion and no garlic as many of Kitchens in North India go without onion and garlic. They prepare Dal, with a slight tempering of cumin seeds and asafoetida in Ghee or clarified butter. As a purely Satwik dish, Aloo Beans Subzi is perfect with its simplicity.

Ingredients:

2 medium size potatoes / aloo
1/4 kg french beans
1 tsp. cumin seeds / jeera
2 tsp. chilly powder / lal mirchi powder
1 tsp. Coriander powder / dhania powder
1/4th tsp. turmeric / haldi
1/2 tsp. garam masala
2 tbsp. oil 
salt as needed

Cooking Method:

1. Peel and chop the potatoes into small cubes and soak them in the water to remove excess starch. Chop the french beans finely discarding little at both ends. Clean and keep it aside.

2. Heat oil in a pan adding cumin seeds. Once mustard seeds turns its color, add cubed potatoes (draining from the water soaked) and give it a stir. Now keep the flame at low covering the pan with the lid. Saute the potatoes every 2 to 3 minutes. 

3. Once the potatoes are half cooked add beans and cook them together for around 5 minutes covered.

4. Add salt before the potatoes and beans are cooked completely.

5. After 5 minutes, add all the dry spices, like turmeric, chilly powder, coriander powder and garam masala until all the spices with vegetables are well combined.

6. The potato beans stir fry is ready to relish as a side dish with roti and rice.

Note: Add salt only when potatoes are 3/4th cooked. Adding salt before its cooked might make the potatoes hard. Again adding salt after the potatoes are cooked might turn them mushy without any chunks seen.
