Tomato Cheese Pasta is an Italian dish cooked in an Indianized way. Since Pasta is a simple dish and comes in large varieties, every region adopts different style of preparing it. I have modified the Tomato Cheese Pasta, according to my family, as my kid especially loves its taste. To this, any kind of vegetables or meat can be added and cooked, which creates a different variety altogether. While making pasta, just make sure that the pasta be coated with the sauce and should not be separated from the dish. The dish can be served as a starter to a meal or can be served as a side to a main dish or as main dish itself at times.
Macaroni, which is called in Italy as 'maccheroni', is a kind of pasta. Here the rule applies that you can call all the macaroni as pasta but not vice versa. There is a pasta shape to complement every pasta dish. Pairing the correct pasta shape can make a big difference in your overall satisfaction when cooking. Although there are number of shapes, designs, colors, but few shapes are common, at least I find them available everywhere. The shapes, which are common, are shapes like elbow, spiral, long tongues like vermicelli/spaghetti, bow tie, shell and feather like. In this recipe, I have used the feather like shape pasta.

This Sunday was one of the bright and sunny day at Wimbledon where Andy Murray lifted the Championship Trophy. It was also the day to go out and enjoy the warm nice weather. To enjoy this historic event and warm weather, I just wanted to cook some quick dish, and my little one was spontaneous and gave me the thought to cook pasta.
Ingredients:
1. Feather shaped Pasta - 2 cups
2. Onions - 2 no.
3. Tomatoes - 3 no.
4. Green chillies - 3 to 4 no.
5. Tomato Sauce - 3 to 4 tbsp.
6. Olive oil - 3 tbsp.
7. Oregano powder - 1 tsp.
8. Pepper Powder - 1/2 tsp.
9. Cheese - 1/2 cup (any cheese according to your likeness)
9. Salt to taste
Cooking Method:
1. Bring water to boil in a large cooking pot and then add the pasta and salt into it. Keep stirring the pasta from time to time so that the pieces don't stick together. Cook this until the pasta gets tender. Once its cooked, drain the pasta and keep aside.
2. While the pasta is getting cooked, you can chop the onion and tomato, and grind them separately into a paste without adding water. Also slit the green chilies into two and keep aside.
3. Once all the preparation is done, heat oil in a pan and add onion paste cooking in low flame. Add salt to it so that the onion does not get burnt (Add salt only for onions as we have already added salt while cooking pasta). Let the onion leaves its raw smell and cook well. Now add green chillies and tomato paste into and cook this too well until the oil leaves to the sides.
4. Add cooked pasta to it, adding the tomato sauce also. Here the tomato sauce will give moisture to the pasta so that it absorbs all the flavours well and the taste is enhanced. Finally add oregano powder, pepper powder and grated cheese, and cover the pan with a lid leaving to rest on flame for another 2 minutes.
5. Serve the Tomato Cheese Pasta onto a plate and some sauce to the side and enjoy the delicious meal.
Note:
1. Chopped garlic can also be added depending upon your choice.
2. Do not overcook the pasta. For good results, always follow the directions on the packaging for the exact time for cooking the pasta.
3. Just drain the excess water, do not rinse it later, as the pastas will become cold, which will halt the cooking process and also the nutrients will be lost.
