Kandagadda vepudu - Elephant Yam Stir Fry is spicy stir fry with a lot of flavours added for the best taste. Though here I have used a particular cuisine (Andhra cuisine) and given a Telugu name for the dish, but all other cuisines also   make the same way, more or less I think, just the addition and deletion of the few ingredients, suitable to their palates. The dish more or less taste like potato fry but its got little more crunchiness.

Kandagadda (Elephant Yam)

Ingredients:

1. Elephant Yam/Kandagadda/Suran - 1/4 Kg.
2. Onions - 1 to 2 no.
3. Black gram/Urad dal - 1 tsp.
4. Bengal gram/Channa dal - 1 tsp.
5. Mustard seeds - 1 tsp.
6. Curry leaves - 1 spring
7. Whole red chilies - 3 to 4 no.
8. Turmeric powder - 1/4 tsp.
9. Chilly powder - 1/2 tsp.
10. Coriander powder - 1 tsp.
11. Black pepper powder - 1 tsp.
12. Salt to taste 
13. Oil - 2 tbsp.

Cooking Method:

1. Peel the skin of the yam and clean it thoroughly in water. Slice the yam into pieces of the desired shape but do not slice it too thin. Let it be little thick. Slice the onions too finely.

2. Now boil the yam with some water till its tender. Once its getting tender add salt before 5 minutes of switching of flame. Once done, drain the water and keep it aside.

3. Heat oil in a pan and add mustard seeds. Once this splutters, add bengal gram and black gram. Once this changes the colour, add whole red chilies, curry leaves and onions, and fry the onions until translucent. Add pinch of salt only for the onions (for Yam, we have already added salt in the water while its getting cooked).

4. Next add the yam into the spices cooking in the pan. Give it a thorough stir.

5. Add turmeric powder, chilly powder and coriander powder. Toss it up and cover the pan for 5 minutes on low flame.

6. Finally add black pepper powder and give it a stir, and switch off the flame.

7. Kandagadda Vepudu, the elephant Yam Stir Fry, is ready to relish as a side dish.

Note:

1. Be careful while you cut this vegetable as your hands might get red and itchy. Do wear your hand gloves to avoid this.
